Fun Food!

Food is another one of our passions. We absolutely love finding locally owned restaurants and eating organic healthy and clean food. We have our share of cookbooks but the number one place we look for new recipes is Pinterest. Believe us when we say there are some REALLY bad recipes on there but here are some pins that we have tried and loved. 

 


 

INGREDIENTS

  • 2 cups shredded green cabbage
  • 1 1/2 cups shredded red cabbage
  • 1/2 cup shredded carrot
  • 1 Granny Smith apple, julienned
  • 2 tablespoons mayonnaise
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Juice of 1 lemon
  • 1 tablespoon poppy seeds
  • Kosher salt and freshly ground black pepper, to taste

    • 1 teaspoon Ground sage
    • ½ teaspoon Salt
    • ¼ teaspoon Pepper
    • 1 clove Garlic; crushed
    • ½ cup Water
    • ½ cup Brown sugar
    • 1 tablespoon Cornstarch
    • ¼ cup Balsamic Vinegar
    • ½ cup Water
    • 2 tablespoons Soy sauce

2 chicken breasts
3 teaspoons olive oil, divided
salt & freshly ground pepper to taste
1 1/2 cups green onions, finely chopped, divided
1 teaspoon minced garlic
1 tomato, diced
3 - 14.5oz cans chicken broth
1/8 teaspoon cumin
1 teaspoon coarse kosher salt
2 avocados, diced
1/2 cup cilantro, finely chopped

  • 15.5 oz can black beans, rinsed and drained
  • 9 oz cooked corn, fresh or frozen (thawed if frozen)
  • 1 medium tomato, chopped
  • 1/3 cup red onion, chopped
  • 1 scallion, chopped
  • 1 1/2 - 2 limes, juice of
  • 1 tbsp olive oil
  • 2 tbsp fresh minced cilantro (or more to taste)
  • salt and fresh pepper
  • 1 medium hass avocado, diced 
  • 1 diced jalapeno (optional)
